What To Do With Ramen Noodles

Ramen Noodles are so cheap, and I confess that I eat them almost every day for lunch (yeah, I like them).  I have been looking for ways to work this super cheap ingredient into some nice dishes and I've come up with a yummy one today!

Cold Sesame Noodle Salad


Ingredients:
9 Blocks Ramen Noodles
1/2 Cup Sesame Oil
1/2 Cup Soy Sauce
1/4 Cup Balsamic Vinegar
1 T Hot Sesame Oil
1/2 Cup Sugar
1 Bunch Scallions/Green Onions, Diced
1 Red Pepper, Julienned
1 T Sesame Seeds

Whisk together the Sesame Oil, Soy Sauce, Balsamic Vinegar, Hot Oil, and Sugar.  Boil the Ramen Noodles, strain, and toss in the sauce mixture (OK if they're still hot).  Toss in the Red Pepper and Onions.  At this point you may want to take a sharp knife and cut the noodles up a bit so that they will be easier to serve.  Top with the Sesame Seeds.  Cover with plastic wrap and cool in the refrigerator for 2 hours.

Total Fake-It Cost: $7.83, or $0.43/person

Compare to Grocery Store Deli Purchased Sesame Noodle Salad ($5.49/lb)

Total Fake-It Yourself Savings:  $8.64

  3. I haven't tried this yet, but it sounds interesting: Fried Ramen Noodle Cake

    Boil 2 pkgs. Ramen Noodles in 4 cups water until tender; drain. Heat 1 tablespoon vegetable oil in non-stick skillet. Add noodles, spreading them out and pressing them into a flat cake. When browned on bottom, turn cake over and add another tablespoon oil around edge of skillet. Top with stir fry, beef tips, or anything else.

  5. I have one too! Stir fry some frozen mixed vegetable, onion, and whatever meat you have lying around- hot dog, left over meat from dinner, strips of steak-ums (not frugal but my son loves them!), bologna. You can also add soy sauce or sweet and sour sauce if you want.When it's cooked, push it all to one side, scramble an egg and dump it in. Stir the egg constantly in the pan until cooked, combine with the vegetable mix and remove from heat. Cook the noodles seperately, use the foil packet an combine with the rest. It's acyually quite amazing ;-)
