Fake Ben & Jerry's Half Baked Ice Cream

I so enjoyed sharing my recipe for Fake Ben & Jerry's Cookie Dough Ice Cream with you that I decided to "fake" another favorite flavor for my Frugal Friends...Half Baked!  Half Baked Ice Cream is a naughty blend of cookie dough and gooey, half-baked brownie in chocolate ice cream.  Yummy beyond words!
The challenge was to get half-baked brownie mix to (1) be eggless for safety and (2) stay gooey in the frozen ice cream.  With one simple ingredient, I've cracked the recipe for Half Baked and we can now all make our own!

What You'll Need:
1.5 Quart Size Chocolate Ice Cream
For The Brownies:
1 Brownie Mix (I used Aldi's brand)
1/3 Cup Vegetable Oil
1/4 Cup Water
3 Heaping Tablespoons of ....Mayonnaise!

Hold on!  Before you click away thinking that I must be "half baked," consider this: Mayonnaise is made from whipping eggs and oil together.  So, mayonnaise can be a great substitute when you're looking for fully pasteurized "raw" eggs.  

OK, so mix your Brownie ingredients together and bake in a 350 oven for about 15 minutes.  Take them out and let them cool.  They'll look pretty greasy, but that will come to our advantage later.


When they've cooled, take a fork and just break them up into messy chunks.


Now for the fun part!

Put your Chocolate Ice Cream in a large bowl and stir until the mixture is uniform and the consistency of mashed potatoes - this will only take 60 seconds at most. 

Add about one- third of your brownies to the ice cream and gently mix together.



 Now start layering the brownie ice cream and chunks of cookie dough into 4 small pint containers.  Work quickly so that the ice cream does not get too melted.  Otherwise, it will not refreeze correctly.



Top it off with a few more pieces of brownie.  Doesn't that look GOOD???


Put plastic wrap and then the lids on your containers and freeze.  The brownie chunks will stay gooey in the fully frozen ice cream.  I...uh...may have had a sample or two to test it out!    


You will have leftover half-baked brownies.  Simply put them in a freezer bag and label for next time (or add a few more chunks while you're digging into your Homemade Half-Baked)!

  2. This looks really good - can you get away with using less oil since the mayonnaise already has oil in it?

  3. Unfortunately, you can't use less oil. The brownies won't stay gooey when they're frozen if they aren't a bit greasy going in. Cheers!

  8. This looks wonderful! B&J's "Half-Baked" ice cream was my favorite, but as I've gotten older I've become lactose intolerant---but I can enjoy it again by using lactose-free ice cream in this recipe! Thank you!! :)

  11. I LOVE this! I made some last year. Unfortunately the cookie dough I used (a packet mix) was too runny so the second time I used store-bought cookie dough. Much better! Thanks so much for sharing.
