Fake O'Donnell's Restaurant Corn Muffins

If you live in the Washington, DC area, you have probably gone to O'Donnell's Seafood Restaurant.  It's delicious!  Before every meal, they bring you a basket of piping hot breads and muffins - a Whole Wheat Baguette, some Rum Buns (recipe coming soon), and some Corn Muffins.  Oh - So - Good!

The Corn Muffins at O'Donnell's are not your run-of-the-mill dry cornbread.  They're light, buttery & have bits of sweet corn - the perfect accompaniment to any seafood dish.  Well, guess what I just found out?  They don't make them anymore!!!

It took me a while, but I came up with a recipe that is very, very close.  Hope you'll try it!

Ingredients (mix in this order):
3/4 Cup Melted Butter
1 1/2 teaspoons Baking Powder
3 Tablespoons Corn Meal
3 Eggs
1 Cup Sugar
1/2 Cup Milk
1/2 Can Creamed Corn
2 Cups (Home Made) Bisquick

Your batter will look a bit lumpy - that's just the way you want it:


Fill your muffin pan with the batter and bake at 350 degrees for about 18 minutes.


You won't need any butter with these - just nosh and enjoy!

  1. I am soooo happy to have discovered your blog! Two years ago I moved from the States to Ireland. The biggest adjustment for me has probably been grocery shopping! I can't tell you how much time I have spent trying to figure out what I can substitute for things that I took for granted in the States but which simply don't exist here! Corn muffins are on that list, along with Pillsbury biscuits (already found your recipe for those!). It will be nice to have a little 'taste of home'. Thank you so much for sharing what you have figured out. This is definitely the best blog I've come across in a long time! :)

    P.S. If you ever post a recipe for Fake-it Yourself Mountain Dew or Reese's Cups, I'll know you're an angel and I'm in heaven!

    I know what it's like to go without (having lived in New Zealand) and that's why I write this blog! Mt. Dew is going to be a tough one - my husband nearly DIED without it in NZ!! Reese's, however, that one I'd like to try! If you have anything else that you're really missing, please feel free to drop me a line!
