Ingredients:
1 Box (4 Cups) Chicken Stock
6 Cups Water
1 Bag Frozen Mixed Vegetables (any kind you like)
2 Frozen Chicken Breasts
1 Package Lipton (or any) Chicken Noodle Soup Mix
1/2 Cup Bisquick (homemade?) mixed with 1 Tablespoon Milk
In a large soup pot, add all of the ingredients (except the Bisquick & milk) and bring to a boil. Once boiling, lower heat to Medium and cook for about 45 minutes. Take out the chicken breasts and pull apart the meat with two forks, or dice into bite sizes. Return the chicken to the soup & bring it back to a low boil.
In a separate bowl, mix the Bisquick and milk until a uniform, stiff dough forms.
Using a Tablespoon, drop the dough into the boiling soup one at a time. Cover the soup and cook for about 10 minutes. Do not stir or disturb the soup during this process.
The dough will puff up into bready dumplings that are delightful to eat in your soup!

I make this even more frugal by using my homemade chicken stock. I routinely buy whole chickens at the market for 79 cents a pound, which I de-bone, de-skin, and cut up up myself. For about $5 a chicken we get two meals, sandwiches, and a quart or more of savory broth. I figure mine comes in at about 40 cents PP. YUM!

ReplyDeleteOnly 1/2 cup of Bisquick mixed with 1 tbs of milk is gonna give you enough dough to make that many dumplings?
