Fake Ben & Jerry's Chocolate Chip Cookie Dough Ice Cream

One thing I missed so very much while living abroad was Ben & Jerry's Ice Cream.  The ice cream in New Zealand was amazing, don't get me wrong - it was the creamiest ice cream I've ever tasted.  Unfortunately, ice cream with those little hunks of cookie dough heaven was unheard of over there (If anyone wants to make a million dollars, go start up a cookie dough ice cream business in NZ!).  I couldn't go without, so I just made my own!

What You'll Need:

For the Cookie Dough* (mix in this order):
1 Stick Melted Butter
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Vanilla Extract
3/4 Cup White Sugar
3/4 Cup Brown Sugar (Packed)
2 1/4 Cup Flour
1/2 Cup Water
1 Cup Chocolate Chips
1/2 Cup Walnuts (optional)

For the Ice Cream:
1.5 Quart Size Vanilla Ice Cream (the cheaper, the better)
1/3 C Brown Sugar - Loose

Mix all of the cookie dough ingredients together and set aside. *Please note that there are NO EGGS in this recipe as opposed to traditional cookie dough that you would bake.  Eating raw eggs can be dangerous, so I have substituted water in their place to keep the dough moist. 




Put the ice cream in a large bowl and mix in the Brown Sugar.  Stir until the mixture is uniform and the consistency of mashed potatoes - this will only take 60 seconds at most.  The addition of the Brown Sugar makes ordinary, cheap ice cream taste rich - just like the real thing!


Using four, 2 Cup Containers, alternately layer the ice cream and chunks of cookie dough.  Make sure not to leave any air pockets.  Work quickly to maintain the texture of the ice cream - if it becomes liquid, it won't refreeze well.




Fill the containers up to the very top.  Cover with a piece of plastic wrap and then add the container lid.


Put them in the freezer for a couple of hours to refreeze.  You now have FOUR Pints of Fake Ben & Jerry's!


You'll notice that there's a bunch of cookie dough leftover.  You have two choices: (1) Add one beaten egg to the mixture and bake cookies at 350 degrees for 8-10 minutes, or (2) Put the dough in a freezer bag, mark as egg-less dough, and use it the next time you make Fake Ben & Jerry's!

Real Ben & Jerry's Cookie Dough Ice Cream:  $3.99/Pint

Total Fake-It Yourself Savings:  $11.77

  16. We now have Cookie dough icecream in New Zealand but it costs $10 NZ or around $15 US for only 1 litre. 4x the price of other flavours!

  18. Wow, you just made my day, not only can I make my own cookie dough ice cream, but I can make cheap vanilla ice cream taste much better! I can't wait to try that out! I also was wondering if those containers that deli meats come in were two cups, and I just checked, and they are, so I can start saving some of those to put the ice cream in and save some money that way too!   20. This is an awesome recipe. Thank You! The only thing I did different was I put the cookie dough in a pan, smoothed it out and froze it. When it was frozen I cut it into small bite sized pieces. Once that was done I used my stand mixer and mixed the brown sugar into the ice cream for a few seconds until blended. Then I added the frozen cookie dough bites. I liked this better than layering it. It didn't take long at all, just a few seconds because I wanted the cookie dough chunks. Then I put it all in the containers as stated above.

    1. BTW if you do put it in a pan, do not put wax paper on the bottom, or if you do remove it before cutting. yeah duh moment when I had to peel tiny bits of wax paper off the bites. Although I ate a few then too :) The BF LOVED the recipe and left the rest of the Ben & Jerry's pints in the freezer and at these instead. Thanks again!
