1 Cup Sugar
1/2 Cup Flour
1/3 Cup Cocoa
1/4 teaspoon Salt
1/4 teaspoon Baking Powder
Mix all these ingredients together with a whisk and dump them into a zipper bag. On the bag, add the following instructions:
Add: 2 Eggs, 1/2 Cup Vegetable Oil, 1 teaspoon Vanilla. Bake @ 350 degrees for 20-25 minutes in a 9 x 9 pan.
That's it! Super easy, right? I made up 3 mixes in less than 5 minutes. These should stay fresh in your pantry for at least 6 months. To extend the freshness, store in your freezer for up to a year.
*To customize your mixes, add milk or dark chocolate chips, butterscotch chips, walnuts, or what ever kinds of add-ins you like in your brownies!

DeleteIf you mix it with a can of black beans it is delicious. Just rinsed the black beans and refill the can up with the beans and water. Blend in a blender and mix with the above dry ingredients, you will avoid oil eggs and anything else the box states you should mix with it. Its a yummy full of fibre treat! Bake at 350 for 30 min. I add walnuts and sometimes chocolate chips.

DeleteIt said a 9x9 inch pan..be sure to spray the pan with Pam..Most cakes do usually make a 9 x 13 cake..However, looks like this is the right amt..Just a smaller amount..even and 8 x 8 pan.. Good luck!!

DeleteI doubled the recipe and then reduced the eggs by one and reduced the cup of oil by 1/4 and added 1/4 cup water, then I cooked in a 13 by 9 inch pan. Baked around the same amount of time. Great!
DeleteI have recently found the fascination of making my cake/brownie mixes with a can of soda instead of the oil/eggs/water. They turn out great, just a little longer cooking time. Does the soda work for this mix as well?

DeleteI've never tried that with brownies, but I have used a can of soda with a cake mix to make cupcakes (used diet Mountain Dew with lemon cake). The batter made a spongier cake than oil/water/eggs does, but they were still delicious (and like an eighth as fattening!). I like substituting yogurt for oil too :)

DeleteOK, well I just made this recipe using pureed black beans instead of oil and eggs. Not good at all. Doesn't taste chocolatey at all. Doesn't taste beany either. Just weird. So I wouldn't recommend using a can of beans for this small of a recipe. May be OK for a 9x13 recipe.
DeleteAnd the texture is not cakey, but not fudgey either. Just weird...Dense, almost rubbery. Didn't rise at all. Maybe I overmixed?....I just put everything in the food processor after I pureed the beans and mixed it in there....like sarahlucindaclark said she did.
I'll try this recipe again, but definitely not with the beans. Bummer. I was really hoping I could sneak those beans in for my family.
Maybe you used too much? The bean amount should be cup for cup of the oil or other fat. I never use beans in place of the egg. Maybe that's why they didn't come out. You can use ground flax or chia as an egg substitution.

DeleteCheck with your local bakery supply store. You can get bulk cocoa powder for cheap. Or try WINCO or FOOD FOR LESS who have it in bulk bins. Even if you buy it off the shelf, it's still cheaper to make the mix from scratch.
DeleteWhen you BREAK DOWN the cost of the ONE BATCH, yes, it is MUCH cheaper than buying a boxed mix. Purchasing all the ingredients initially will cost more, but you will get quite a few batches from it.

ReplyDeleteIt tasted good but was kind of dry. Maybe you need extra large eggs? Usually there is a variation for cake like brownies and I wondered if I could add another egg and it would work ok. I think next time I will try that. I think I will also do half brown and half regular sugar.

Do you know how much mix each one should be? figured it would be easier to ask instead of sit there with 3 measuring cups (which i don't have) and try and make them all even... help! :)

DeleteI'm sorry to say, but I don't know. This recipe is meant to be done separately - that way you can be sure that the exact amounts are in each bag. Maybe put the whole thing in one large bag and make a big old batch of brownies later?
I made several batches of this yesterday and it is just about 2 cups per batch. Hope that helps!

These are so delicious! I always believed that brownies from scratch could never be as good as box brownies... but these are DEFINITELY just as good! My husband and I both loved them and ate the whole pan in less than 24 hours... oops. :)

ReplyDeletei had a similar issue! the taste is so close to bc (the only kind of brownies i actually like. i've never had delicious home made ones), but mine came out very grainy/crystalline. i did use organic raw sugar. maybe some way of dissolving some of the sugar before pouring? i saw some recommendations for using some water in place of some oil, perhaps the sugar could go in the water to dissolve? i am *not* a baker, so my ideas could be way off.

DeleteAbsolutely delicious! I came across this recipe on Pinterest the other day and immediately made the mix. I baked the brownies tonight and my family of 4 just ate the whole pan! The only addition that I made to the basic mix was to add 1/2 cup of mini chocolate chips. For real...these were the best brownies that I have ever made. My husband said..."the only thing missing is some ice cream"--lol. Thanks for sharing!

ReplyDeleteI tried this yesterday and am considering given mixes with homemade vanilla as Christmas gifts. (Yes, we're on a big-time budget!) Because I don't have an 8x8 pan, I multiplied the recipe by 1.5, and it turned out perfectly. It is a little fudgier (is that a word?) than the BC box mix, but much better than the homemade brownies I've attempted in the past. I always use applesauce instead of oil, and that worked well with this. I made up a second mix with wheat flour and raw sugar; we'll see how that worked out next week. I'm also thinking about adding in some grated zucchini--gotta be sneaky with my fam!

DeleteMade these using freshly ground whole wheat flour and raw sugar. Also threw in some chocolate chips and some peanut butter chips. Other than coming out a little grainy (probably due to the ww), they were FABULOUS! I always have these ingredients on hand, and am so glad I can make brownies without the box mix. ReplyDeleteIs this recipe good for high altitude areas? I made this according to the recipe and they were so oily they didn't even firm up. It was just a bubbly, oily, soupy mess when I took it out of the oven! I'm rather sad....I was really hoping these would turn out! :( help!
ReplyDeleteHad to try this before I committed to a zillion bags filling my cupboards (did someone say brownies???), like when I found the brilliant 123 cake. Blech. A year down the road, 3 containers of cake mix finally got tossed because they were just gross.
ReplyDeleteThese though, these are zillion bag worthy. These are yummy brownies. I stirred chocolate chips and pecans into mine, and put caramel on top that was leftover from our christmas baking. I like being able to have this in my cupboard for a quick dessert instead of the boxed mixes filled with preservatives and who knows what. Yay!
I tried these, but instead of regular cocoa powder and sugar I substituted ChocoVivo Mayan Tradition - it's cocoa powder, raw sugar, chiles and a touch of cinnamon. Excellente para la dia de los tres reyes next week - but I will have to make another batch!

ReplyDeleteExcellent tasting & economic recipe...thanks for posting it. I think some comments reflect that readers are confused about what kind of cocoa to use. I'm not much of a cook and I followed your directions and did not have any trouble at all. Maybe the following will help those who don't know all cocoas are not the same.
ReplyDeleteBaking cocoa has no sweetener in it. It's extremely bitter. Chocolate cocoa is generally in a mix and already has sugar and the like. It's meant for drinking and not baking. Also Baking chocolate has more of the cocoa fat in it. Drinking cocoa has been processed to remove much of the fat. Hope this helps.

I called my son and told him I had made homemade brownies, and within minutes he and my grandson were walking through the back door (they live behind us). I walked into the kitchen and my grandson had mouthful of brownie and one in each hand! ha! I cut up the rest of the brownies and sent them home for the rest of their family to enjoy. They were thrilled! :) I'm wishing, however, that I'd put back a couple for myself. They were fantastic and I will definitely be making them again! Thanks for the terrific recipe!

ReplyDeleteTo me these did not taste like the box kind... these were dry and cake-y, not fudgy. If a 9 x 13 takes two eggs, I should have only put one egg in these... eggs make them dry and cakey. Might try it again w/only one egg.

ReplyDeleteI totally love these!!! Im an American living in Germany and they unfortunately don't sell ready-made brownie mix. I am in love with these brownies, they always turn out perfect. I have my own food blog, I've created a spin-off of these brownies and gave you a shout-out in my blog post!
ReplyDeletethey do sell brownie mixes, but they are by far not as good as this one. plus they are way too expensive if you buy them ready made.

ReplyDeleteusually lasts 6 months. if it's stored in the freezer up to 12 months.
DeleteI just made three of these mixes- two to store in Ziplocs and one that I cooked. The one that I cooked today- I added one cup of semi-sweet chocolate chips to and I cooked it in a 13x9 at 350 degrees for 18 minutes and it came out perfect.

ReplyDeletewe've had the problem when we doubled the ingredients. our solution: only 3 eggs and 3/4cup of oil instead of 4 eggs and 1 cup for double the amount of sugar, flour etc.

ReplyDeleteOur very favorite brownie mix. i've used coconut oil the other day instead of vegetable oil and usually use home made vanilla sugar. anyhow the coconut oil brownies came out even better than the regular ones.

my new fave!!! instead of vanilla extract, I use almond extract. gives it a super yummy, cherry type of flavor.
ReplyDeleteThe Betty Crocker Brownie Mix directions also lists 1/4 cup water in addition to the eggs and vegetable oil.
ReplyDeleteI made these tonight. I doubled the recipe, added 1/2 C. chopped pecans and baked them in a 9X13 pyrex pan for about 30 minutes. Once they were out of the oven I poured about a half cup of semi sweet chocolate chips on top and allowed them to melt. Then I spread the melted chips over the warm brownies. Easy Peasy frosted brownies and I saved money too. Thanks for sharing this recipe. I even made another bag to put in the cabinet for another day. I just love saving money!
ReplyDeleteTo keep this as a complimentary and frugal tip only comment I want to say I love your ideas and have used all of your recipes - brownie mix, cookie mix AND corn muffin mix. My tip (NOT a complaint) would be that you didn't factor in the cost of the name brand Ziplock bags pictured in your photos. They can get quite pricey in my area. Depending on how much they are per bag the Jiffy corn muffin mix may come out to be a wash (I can get them on sale sometimes for .50 and if I have a coupon, BAM!)... I have remedied this extra cost by storing the mixes in reusable (and more environment friendly) mason jars. I already had them but even if I didn't they would have paid for themselves rather quickly as I bake ALOT. I don't know if any of the other posters have commented on this or not, needless to say I'm lazy - hence wanting to use premade mixes instead of baking from scratch every time ;) Thanks so much for the recipes!

I thought the recipe was perfect so I just wanted to say thanks for this! ReplyDeleteLooks super easy to make these. Why on Earth would you people usea can of soda? You are defeating the purpose of not use the store brand laden with unknown ingredients. Soda has a huge amount of unknown bad ingredients plus it's bad for your health. There's a way to use bananas instead of oil and eggs but I don't remember the amount. If interested do some research and you could probably find it.

ReplyDeleteI guess I needed to read the comments before using this recipe! I thought a brownit mix is for a 9x13" pan just like it says in the picture up top. I already have it in the oven. Oh well... next time and hopefully I remember to double the recipe! Thanks for sharing!
ReplyDeleteI used butter instead of vegetable oil. There was not enough batter for even an 8x8 pan but because I read the reviews, I kept my eye on it so as not to overbake. However, these are more cakey and less fudgey than we'd like.

I made these tonight and they are actually darn tasty. I made sure to undercook them slightly and they were perfect! I still like the boxed brownies the best but these are for sure a close second! Will definitely make again.

Sorry I can't help myself, but is this fake fake brownie mix? Boxed brownie/cake mixes are not the real thing! I don't even think the Betty Crocker brownie mix has cocoa in it. This is a great recipe for real brownies that are delicious!

ReplyDeleteThis is awesome! I recently moved to Sweden and we do not have "brownies" as we did in the states. You can get boxes of mix from the American store in Stockholm, but it will cost you over $7 per box!!! This is perfect. Simple, easy to store and my kids can pull out a baggie and make them by themselves! Thanks so much!!!

2nd time that I've tried this recipe. Both times these were crunchy around the edges but so gooey in the middle that I had a hard time scooping them out - had to eat them with a spoon. Way too sugury tasting for me, sorry... I'm probably just doing something wrong. :(

Since finding this recipe years ago, I always use it to make brownies. They're super good. I always make a double batch and often mix a whole bag of coconut flakes in them! I love coconut! It makes 'em chewy!๐๐
