Eat The Rainbow on St. Patrick's Day!

I just wanted to share with you a different kind of dinner we had this St. Patrick's Day.  No traditional corned beef or cabbage....we ate The Rainbow!

Isn't that totally fun???

To make the rainbow, I used:

Red: Stewed Tomatoes
Orange:  Carrots
Yellow:  Corn
Green:  String Beans
Blue: Mashed Potatoes w/blue food coloring (OK, maybe this is cheating, but they were a HUGE hit!)
Purple:  Red Cabbage
White Cloud:  Bowl of Country Gravy
Pot 'O Gold:  Roasted Chicken

Of course, we also had Sweet & Savory Soda Bread on the side!

Happy St. Patrick's Day everyone!
