Well, I'm proud to say that I think I've come up with a Coffee Cake that is pretty darn close to the expertly made one you get at the Silver Diner! Let's make one, shall we?
Ingredients (mix in this order):
1/2 Cup Butter, Melted
2 Eggs
1 Cup Sour Cream
1.5 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Almond Extract (or Vanilla)
1 Cup Sugar
2 Cups Flour
Crumble Topping:
1/2 Cup Brown Sugar
1/4 Cup Flour
1 teaspoon Cinnamon
Preheat oven to 375 degrees. Mix cake ingredients and spread half of the batter into well greased loaf or bundt pan. Sprinkle half of the Crumble Topping onto the batter, then add the remaining batter on top. Top with remaining Crumble Topping. I usually pat the topping down into the batter to make it even:
Bake for 35-45 minutes and allow to cool completely before removing from the pan. Brew your favorite Cup O' Joe and enjoy!
